These are the regional specialties you must try when you visit Italy this summer!


Rome (Lazio)

You will want to dive into the iconic pasta dishes that define the city: Cacio e Pepe, Carbonara, Amatriciana, and Gricia. These aren't fancy dishes, but they are built on quality ingredients and technique. Pair them with Pecorino Romano and guanciale (cured pork jowl), then move on to proteins like Saltimbocca alla romana or Coda alla vaccinara for something more adventurous. For wine, the crisp Castelli Romani whites (especially Frascati) are perfect for summer dining. End on a sweet note with Maritozzi, which are a cream-filled pastries that are pure indulgence.



Florence (Tuscany)

This region is a carnivore's dream. The Bistecca alla fiorentina is non-negotiable (just be aware it is charred on the outside, but still juicy and red on the inside). You can also try Ribollita and Pappa al pomodoro for authentic vegetable-focused dishes. Porchetta and wild boar (cinghiale) preparations showcase the region's hunting traditions. The cheese board should feature Pecorino Toscano and burrata, and the wine list is world-class: Chianti Classico, Brunello di Montalcino, and Vino Nobile di Montepulciano. La Spezia (Liguria)

The Cinque Terre coast makes this region a seafood lover's paradise. Pesto Genovese is the soul of Ligurian cooking—fresh basil, pine nuts, garlic, and olive oil on Trofie pasta. Fresh anchovies, mussels, and octopus are summer staples, along with Focaccia di Recco and Farinata. Prescinseua (local fresh cheese) and Cinque Terre DOC whites round out the experience. Pandolce, a traditional Genoese cake, makes a memorable dessert.
